I have some leftover country style pork ribs and some pork shanks (thighs) and I have been debating on whether to dry rub and smoke them, or wet rub and grill them. 🤔
Anybody ever work with pork shanks before? I haven't cooked them specifically so I'm curious if others have found a nice method for them. They seem like giant chicken legs. With pork instead of chicken.
Normally I would wet rub some BBQ sauce on them and grill them but I'm curious if anybody has any good smoker dry rub recipes for them.
